Deep as a night sky, San Román's wine boasts a dark cherry hue. On the nose, black fruit takes center stage, dancing with hints of iron, cocoa, licorice, and fragrant herbs. The taste is rich and full-bodied, with firm but refreshing tannins. Echoes of the aromas return, leaving a lingering impression of fruit, iron, and spice.
Background
The Mariano Garcia family continues to build their wine legacy. San Román Bodegas, their latest project in the Duero Valley, joins their growing empire alongside Bodegas Mauro and Garmón Continental. Here, they're dedicated to organic and biodynamic viticulture, nurturing biodiversity in their 130-hectare vineyard. The focus is on Tinta de Toro, Garnacha, and Malvasia grapes, with vines averaging 45 years old. This hot, dry region, with low yields (3,000-5,000 kg/ha), produces grapes that thrive in the warm summers with significant temperature swings.
Production Process
San Román coaxes individuality from each grape. Hand-picked at peak ripeness, varieties and plots see separate harvests and vinification. A gentle hand sorts the fruit again at the winery, ensuring only the best clusters progress. Destemmed and cooled, gravity guides the berries to fermentation tanks where native yeasts work their magic, unlocking the essence of each unique vineyard parcel. The wine then spends 24 months in American and French oak barrels.
