Background
José María Ruiz dreamed of opening his own small winery where he could produce the highest quality wine for his restaurant. This project came to life on the first 9 hectares of vineyard in Ribera del Duero. Since the first harvest in 1991, the winery has thrived, based on sustainable development and innovation.
Production Process
The wine is produced with the aim of capturing the uniqueness of the Carraviejas Valley terroir. A blend of Tinto Fino, Merlot, and Cabernet Sauvignon grapes is used in production. A meticulous approach is taken to each berry, ensuring harmony with nature and a high-quality beverage. Grape selection is key to creating a wine that can reflect the history and character of its origin. The wine must is produced using the gravitational method. The wine is aged for 12 months in barrels of American and French oak.
