This Macabeo is crafted from grapes grown on ancient vines (over 85 years old!) in the Carramainas vineyard. It delivers a dry wine experience with a touch of Burgundy class. Look for delicate floral and citrus aromas that give way to a toasty, slightly salty finish. The body is medium-weight with a creamy texture, balanced by lively acidity for a refreshing taste. Expect lingering minerality that keeps the flavor profile interesting on the palate.

Background

Known as 'the Flying Scotsman,' Norrel Robertson transitioned from a jet-setting lifestyle to winemaking in Spain and France back in 2003. His fascination with Grenache grapes led him to establish his own venture dedicated to this varietal. Robertson views Spain, particularly Aragón, as a treasure trove for Grenache due to its diverse soils, elevations, and abundant sunlight.

To mitigate harsh tannins, he opts for concrete tanks over barrels for fermentation, removes most stems before crushing, and employs gentle extraction methods to enhance flavor. Additionally, his wines benefit from extended lees contact, further enriching their character.

Production process

Hand-harvested grapes are pressed whole bunch the next day, using traditional Burgundian methods without any additives. The juice ferments naturally in used oak barrels at cellar temperature for two weeks. After that, the wine rests on the yeast lees for several months, developing flavor. It then ages for another year before bottling, all done without any filtration or adjustments.
