The deep cherry-colored wine coats the glass with thick streaks. Its aroma is rich with ripe blackberries, plums, and hints of earthy balsamic and minerals. Notes of coffee, cocoa, and licorice contribute to its complex bouquet. On the palate, it presents bold flavors of ripe black fruits balanced with subtle toasty undertones from aging.

Background

For generations, the Díaz Bayo family has been rooted in Spain's Ribera del Duero, cultivating grapes and crafting wines. Their history includes traditional methods such as stone presses and wooden vats in cool, underground cellars. Today, their winery uses hundreds of oak barrels, primarily French with some Hungarian, to age their wines and enhance complexity. Spanning 35 hectares in Fuentelcésped and San Juan del Monte, their vineyards feature diverse soils and impressive altitudes up to 940 meters. The vines range in age, and the Díaz Bayo family is dedicated to reflecting the unique character of their land through meticulous organic and biodynamic farming practices.

Production process

After malolactic fermentation in barrels, the wine matures for 20 months in French oak barrels, deepening its flavors. It then spends an additional 10 months in the bottle to refine its character before being enjoyed.
