Tasting Notes

This is an expressive and complex wine with lively acidity. This vintage is less strong compared to other years. The color is a rich red. The aroma contains notes of ripe black fruits, such as cherry and plum. The taste is fresh and intense, with hints of dark fruits, spices, lavender, licorice, and cocoa. It is recommended to try it after the year 2024.

History

Dominio de Pingus is a small boutique winery located in the province of Burgos. Its creator, Peter Sisseck, is a well-known figure in the world of wine. He is producing beverages that are eagerly sought after worldwide. His story began in Bordeaux, where he worked as an oenologist. Dreaming of creating his own wines, he acquired a plot of land in La Horra in Ribera del Duero, planted with old vines, and set out to extract all the strength through rigorous pruning and limited harvesting.

Production Process

PSI is mainly produced from old Tempranillo vines. It is a more affordable wine than Flor de Pingus and Pingus from the eponymous winery. Grapes come from small plots owned by several farmers. The berries are harvested and sorted by hand. Fermentation takes place in cement and stainless steel tanks, after which about half of the wine matures further in cement, while the rest matures for 14-16 months in barrels that were used for the production of Pingus and Flor de Pingus.
