Biagorri De Garage is a wine of deep cherry color. Its aroma blends ripe black berries and fresh mineral undertones, enveloping the senses, leading to an elegant complexity and invigorating taste, promising unique moments of enjoyment.
Background
The wine was created by the BAIGORRI winery, founded in 2002. Its uniqueness lies in its distinctive construction beneath the surface by architect Iñaki Aspiazu, at a depth of 35 meters. This construction allows the use of gravity in production and minimizes mechanical intervention, which could otherwise damage the berries. The grapes are cultivated on old vines within an environmentally sustainable area.
Production Process
At the heart of the Baigorri production process lies a philosophy of respect for nature, utilizing manual harvesting to ensure gentle grape processing.
This wine is made from 100% tempranillo vines that are over 60 years old in the estate's vineyards. All grapes are hand-selected through special vibrational tables. The wine undergoes malolactic fermentation and is aged in new barrels made of French oak for 24 months, thereby imparting a rich taste and deep aroma.
A meticulous approach to production allows the true taste of the terroir to be preserved, creating a wine that embodies the essence of its origin.
